This is a great sauce that is quick and easy for that chinese takeaway Friday fix. Add some chicken, pork, prawns or vegetables and serve with some sticky fragrant Jasmine Rice.
400g chopped tomato
250g tomato passata
200g pineapple & Juice ( a small tin works just fine) diced
1 tbsp cider vinegar
2 tbsp brown sugar
Mix ingredients together in a pan, bring to the boil and reduce to a simmer for ½ hr, or until the sauce has reduced and is lovely and thick.
