Sausage Casserole and Cobbler

This is a great comfort food dish. You can either have it as a casserole or serve with the cobblers .


Sausage Casserole:

1 x tbsp oil

200g x Sausage Meat

1 x onion - diced

2 x carrot - diced

1 x potato - cubed

4 x mushroom - sliced

1 x tsp garlic

½ Leek - sliced

80g x Butter Beans

400g x chopped tomato

2 x tsp tomato puree

200ml x hot water

1 x tsp paprika

2 x tsp mixed herbs

Pinch salt & pepper


● Divide sausage meat into small chunks, set aside

● Put oil into a pan to warm and add onion, cook until slightly coloured.

● Add leeks, carrots & potatoes, cook for 3-4 mins, stirring constantly so they don’t burn

● Add mushrooms & garlic, cook for a further 2 mins

● Add herbs and paprika to pan mix to coat everything

● Add tomatoes, water & tomato puree, bring to boil.

● Reduce to simmer, add butter beans and sausage, cook for 10 mins. Add more water if it starts getting too thick

● Season to taste














Cobbler:

250g x self raising flour, plus a little extra for dusting

Pinch salt

50g x butter

150ml x milk


● Preheat oven to 200 celsius/ gas 6

● Pour flour and salt into a bowl, rub in butter with fingertips until mix resembles breadcrumbs

● Add milk stirring constantly until mix forms a soft, spongy dough

● Turn out onto floured work surface and roll out until 2cm thick

● Cut into rounds using cutter, re-rolling and kneading where necessary

● Place onto a lined baking sheet, cook until slightly golden brown
