This cake is so moist and lemony!
100ml veg oil
275g self raising flour
1 tsp baking powder
1 lemon zested, 1⁄2 juiced
150g icing sugar
1⁄2 lemon juiced
Heat oven 200 deg/gas 6. Line loaf tin with baking parchment
Mix flour, sugar, baking powder and lemon zest in a bowl. Add oil, lemon juice and 170ml
cold water, mix until smooth
Pour mix into tin. Bake for 30 mins. Leave to cool. For the icing, sieve icing sugar into a bowl.
