Carrot Cake

Cake

200g carrots, grated

175g soft brown sugar

200g self raising flour

1 tsp bicarb soda

2 tsp cinnamon

Zest 1 orange

2 eggs

150ml sunflower oil

Icing

50g butter, softened

75g icing sugar

200g soft cheese



Method

Preheat oven 180c/gas mk 4. Line an 18cm square tin with

baking parchment.

In a bowl add grated carrots, sugar, flour, bicarb, orange zest

& cinnamon. Mix together.

Add eggs oil, mix together to a batter.

Pour mix into tin and cook for around 30 mins or until a knife

comes out clean when you poke the cake.

Whilst the cake is in the oven, in a mixing bowl add all icing

ingredients and mix together until smooth.

Once the cake has cooled, spread icing over the top.
