BASIC PIZZA DOUGH

This is a really nice basic pizza dough, You can use it as is or freeze it for later. Simply wrap in some oiled baking parchment.

This will make 4 large family pizzas, or between 8-10 smaller ones depending on how big you need them.

  • 500g strong bread flour - white

  • 7g instant yeast ( one sachet)

  • 300ml warm water

  • 2 tbsp oil

  • Pinch salt

● Mix all ingredients together to form a dough and knead for 5 mins until dough is nice and smooth and glossy

● Put dough ball in an oiled bowl and cover with a warm damp tea towel or loosely with cling film, allow to prove for 45 mins ( or until the dough has doubled in size)

● Remove from bowl onto a lightly floured surface, knead for a further 2mins

● Divide up into balls and roll out as many as needed. Place onto a lightly oiled baking sheet, cover with tomato sauce and toppings of your choice.

● Cook until crust has browned and the cheese in golden and bubbling.

Basic Pizza Sauce

Can chopped tomatoes

1 x red onion

2 x garlic cloves

1 tbsp mixed herbs

1 tsp smoked paprika

1 - 2 tsp sugar

Salt & pepper to taste

Dice onions and fry off in a splash of oil, cook until soft and starting to go translucent, add chopped garlic and cook for 2-3 mins.

Add herbs, paprika, sugar and chopped tomatoes. MIx through and reduce to a simmer.

Cook out for 5 mins until the sauce has reduced and thickened. Season to taste.

Use a food processor or a stick blender to blend to a smooth sauce (you can leave it slightly chunky if preferred).

This can be made ahead of time, and frozen. The silicone ice cube trays make excellent portion sizes( obviously depending on your pizza sizes, you may need more than one)

Then simply spoon on your pizza and spread out.
