250ml tomato ketchup ( Tomato passata works just fine)
2 tablespoons white wine vinegar
1 shallot, diced
1 garlic clove crushed
4 tablespoons maple syrup.
2 tablespoons molasses
1 eating apple, cored and chopped
Place all the ingredients in a pan and season. Stir everything
together and pop onto medium heat for 5 minutes to heat
through.
You can leave as is, or blend for a smooth finish.
For a more grown up sauce, add 5 tablespoons of bourbon
whiskey.
